Spring Soup

Just what Mother Nature ordered!

When Mother Nature on one hand delivers a lovely bounty of fresh veggies and on the other hand delivers days of endless rain? Turn those veggies into sunshine by making a big pot of tasty vegetable soup.

Zucchini, Carrots, Broccoli, Radishes and Carrots, oh my!

I call this, any vegetable you have on hand, goes into the pot soup. Add some vegetable or chicken stock and spices – I used tumeric and curry powder to give this batch an extra kick. I also had fresh bread and garlic spread from the Farmer’s Market. Oh, yum!

A little time spent time spent chopping, sauteing, and simmering is well spent to enjoy this hearty, healthy soup for days to come. Don’t let those beautiful vegetables go to waste. And your house is going to smell so well home-y.

The weather in Florida may be keeping me inside more than I like, right now but it certainly makes for beautiful sunrises. And I have to confess, I’ve even had a bowl of this soup for breakfast.
